The counter changes with the market and the season. Depending on the day, the display might hold whole fish such as sea bass, sea bream, Dover sole or turbot, alongside shellfish like lobster, langoustine and scallops. You choose from the ice; the kitchen prepares it to order.

Three ways with a whole fish. Grilled for char and simplicity; baked in a salt crust to keep it moist and season it through; or steamed for the cleanest expression of the fish. The kitchen will talk you through the day's catch and the best way to cook it.
