At the heart of it sits the fish counter - whole fish on ice, chosen and cooked to order: grilled, in a salt crust, or steamed. The display changes with the market: sea bass, sea bream, Dover sole and turbot, alongside shellfish such as lobster, langoustine, Mazara prawns and scallops.

The Raw Bar: Oysters, Crudo and Caviar

For a lighter start, the raw bar runs to oysters, from Carlingford to Maldon Rock, a sea bass crudo finished with citrus and olive oil, and a tuna tartare. Alongside sits a dedicated caviar service - White Sturgeon, Oscietra and Beluga - served on its own or added across the menu.

The lobster linguine is the dish most tables order without looking at the menu: whole lobster, hand-cut linguine, a tomato base kept bright rather than heavy.
